Happy Halloween!
I attended a Halloween party this past weekend and decided to try out the Foodstirs Movie Night Cupcake Mix so I would have something fun and yummy to bring! It’s a sweet (pun intended) kit with all the dry ingredients to make delicious vanilla cupcakes with “popcorn” icing. All you need are a few wet ingredients to make this recipe come alive!
Foodstirs was started by Sarah Michelle Gellar (yes…THAT Sarah Michelle Gellar) and her friends Galit Laibow and Greg Fleishman. They all loved making memories with their kids baking at home and wanted to share that sentiment with families across the world. They offer baking kits that are made with ethically sourced, organic ingredients. Also, all of their mixes (with the exception of the organic short stack pancake mix) are vegan.

I had my trusty sidekick with me who basically just played with the confetti and stickers that came in the box 🙂 She did help “dump” (her word) a few ingredients into the mix so that was pretty cute (and messy haha!)
The batter is quite thick but was the perfect amount to full the 6 cupcake cups. You use the Foodstirs cupcake mix packet and add one egg, melted butter, greek yogurt and milk (we used almond milk and almond yogurt). The vanilla batter smelled soooo good.
When I took them out of the oven I thought they looked like they had risen too much and the icing would just run down the sides of the cups. I took a knife and cut the tops off the cupcakes to make them more flat before applying the icing. Afterward I realized it would have been fine to leave them as they were because the icing ended up looking less rounded than I hoped.
The icing mix and vegan marshmallows come in the kit, you just add butter and yogurt!
Here’s the finished product! They looked so cute and tasted delicious. The kids at the party seemed to like them too 🙂
